Our take on a traditional French recipe using wattle blossoms from our farm, our Wattle Flower cordial is delightfully crisp with distinctive floral and citrus notes, and delicate cinnamon spice-like characteristics.

How to Use Wattle Cordial

Also known as acacia flower syrup, Wattle Cordial brings a uniquely Australian flavour to drinks and desserts.

  • Mix with soda water and a slice of lime
  • Use in your favourite summer cocktails - add gin, vodka or sparkling wine
  • Mix with hot water and a slice of lemon and/or ginger
  • Drizzle over ice-cream, plain yoghurt, fruit salad or pancakes
  • Create the ultimate Aussie Pavlova with Wattle Cordial swirled though whipped cream
  • Use in sorbets or jellies
  • Add to oysters for a real 'Australian' flavour

Why do we use a French Recipe for an Australian Flower?

Nicolas Baudin, was the first European to explore Tasmania (in 1771) and returned again under instruction from Napoleon to tour Aus`tralia in 1800-03. 

Napoleon’s wife, Josephine, so loved Australian wattles, she pioneered the  planting of specimens brought back by Baudin to France (where they are known as Mimosa).

Today, the mimosa tree has transformed the landscape in the south of France, and travellers from across the world visit the French Riviera to see the “Route du Mimosa” in bloom in late winter and enjoy Mimosa flower beverages.
